One factor that sets Sumatra coffee apart is its unique wet processing technique, involving a three-step drying process. After picking, homemade machines pulp the cherries and remove the skins.

The beans are then left to ferment overnight in woven plastic bags. This initial fermentation process imparts an inimitable depth of flavour to the beans through conventional processing methods.

The next day, the fruit pulp is washed off, and the beans dry on sheets or clay surfaces. This step is crucial in achieving the desired moisture content and ensuring the beans develop their characteristic earthy notes. After the beans are partially dried, machines remove the parchment skin and the beans are left to dry further.

Finally, they undergo a third drying process at the exporter’s facility after the beans arrive at the port city of Medan. This meticulous, multilayered process adds complexity to the final product, giving Sumatra coffee its distinct flavour profile and deep body.
